The fat-soluble vitamins are the harmful ones when you have excess of those in your body. They are found not only in fatty foods such as butter, vegetable oils, dairy foods, liver and oily fish but also in iron rich foods. These are stored in your liver and are used up gradually. So you do not need to ingest these daily otherwise you will have too much in your liver. Examples of these are Vitamins A, D, E and K.
Minerals are essential for most of metabolic processes in the body and especially for chemical reactions that turn food into energy. They are also useful in building and maintaining bones and teeth. The most important minerals are calcium and iron. They are only useful in the form found in foods such as meat fish and milk. Other foods with iron includes cereals dairy products and nuts.
Trace elements although found in very much smaller quantities than those mentioned above are also extremely essential for your health. They are found in almost all types of food, fruits and vegetables. The most common types of these trace elements are found naturally in foods and examples are fluoride and iodine which help in the prevention of certain types of diseases.
By far the most vital mineral in the body is iron because it is a constituent part of all living cells. It performs many critical functions like carrying oxygen from our lungs to supply to all parts of the body.
